The Chicken of the woods is a great meat substitute. Some say it tastes like chicken, others say it tastes like crab or lobster. Whatever you decide it tastes like, it is a wonderful tasting mushrooms. The chicken of the woods are a polypore. Also known as the chicken mushroom, sulfur shelf, laetiporus, chicken fungus. This is NOT the maitake (hen of the woods) or the fried chicken.Due to some people experiencing allergies, try a small amount first. To rehydrate, leave in water for 15 minutes. Do not use very much oil to cook them in, they absorb whatever you cook them in, so use a small amount. We also have fresh when they are in season.
